{"id":5321,"date":"2021-08-14T01:18:05","date_gmt":"2021-08-14T01:18:05","guid":{"rendered":"https:\/\/chef.shangeryou.com\/michelada-chicken-fajitas\/"},"modified":"2026-06-09T09:47:59","modified_gmt":"2026-06-09T09:47:59","slug":"michelada-chicken-fajitas","status":"publish","type":"post","link":"https:\/\/chef.shangeryou.com\/fr\/michelada-chicken-fajitas\/","title":{"rendered":"Michelada Chicken Fajitas"},"content":{"rendered":"Prep Time: 30 minutes\n\nCook Time: 20 minutes\n\nYield: 4 servings\n\n<u>Ingredients:<\/u>\n<ul>\n <li>4 Chicken Breast, butterflied and sliced in half<\/li>\n <li>1 Can of Michelada , usually they are 24 oz.<\/li>\n <li>1 Bell Pepper, thinly sliced<\/li>\n <li>1 White Onion, thinly sliced<\/li>\n <li>2 cups Grape tomatoes<\/li>\n <li>2 tbsp Olive Oil<\/li>\n<\/ul>\nhttps:\/\/www.chefstemp.com\/wp-content\/uploads\/2021\/08\/Michelada-Chicken-Fajitas-1Chefstemp.jpghttps:\/\/www.chefstemp.com\/wp-content\/uploads\/2021\/08\/Michelada-Chicken-Fajitas-2chefstemp.jpg\n\nMexican seasoning, see the recipe:\n\nButterfly the chicken breast, then cut them in half. \u00a0Slicing the chicken breast in half allows the marinade to be absorbed and to assure the chicken is done the whole way through. \u00a0The middle remains moist and the outside is not overcooked.\n\nIn a container or plastic bag, add 1 can of Michelada and 1 tbsp of Mexican seasoning. Feel free to have a drink or two before adding to bag, have to make sure the beer is good! \u00a0My dad loved Red Beer and passed that one to me so it&#8217;s no surprise I loved Michelada&#8217;s. \u00a0Add the sliced breasts to the marinade and refrigerate overnight. 30 minutes before you are ready to grill, removed the chicken from the marinade. Time to light the grill! I prefer to use charcoal when grilling fajitas. \u00a0If using a gas grill, make sure and turn it up as high as it will go to get a great sear. \u00a0Another excellent way of cooking fajitas is with a wood fire pit with a grill grate. Thinly slice your bell peppers and onions, place them in a large bowl along with the grape tomatoes. Toss them with olive oil, salt and pepper. I prefer to use colored bell peppers over green bell peppers. They have a sweeter taste and add more color to the dish.\n\nBe sure your grill is clean and hot. Place the chicken on the grill. \u00a0Place the veggies in your grill basket and put them on the grill grate.\n\nhttps:\/\/www.chefstemp.com\/wp-content\/uploads\/2021\/08\/Michelada-Chicken-Fajitas-4chefstemp-e1628583021213.png\n\nCook chicken for 3-4 minutes on each side. \u00a0When the chicken has a good sear on it , you are able to flip it without it sticking to the grill. \u00a0Its like your grill is telling you that your meat is cooking nicely!\n\nIt is completely personal preference how long you cook your veggies. I like mine with a good char but still have some crunch. \u00a0When the grape tomatoes begin to burst is a good time to pull the veggies off the grill.\n\n\n\nCook the chicken to an internal temperature of 165\u00ba on the Chefstemp Finaltouch X10 thermometer.\u00a0 I do a lot of grilling after dark during the summer because we have so much going on. \u00a0My thermometer makes it easy to know that my meat is on point with the biggest and brightest screen. \u00a0The best features is it\u2019s extremely fast reads , you don\u2019t have to keep holding your hand over a 500\u00ba grill for that long!\n\n\n\nOnce your chicken has reached 165\u00ba, remove it from the grill and allow to rest while you warm your tortillas on the grill. Resting the meat allows the juices to remain in your meat when you slice it. Cook the tortillas for about one minute on each side. You want a nice char on each side. This gives them a great smoky taste and more importantly makes them pliable so there are no busted fajitas!\n\n\n\nOnce your chicken is rested, thinly slice them. Now it\u2019s fajita time. Serve with your choice of accompaniments , I serve mine with sour cream , cheese and my homemade salsa. \u00a0This is one meal your family will find mucho delicioso.\n\n\n\n<u>Mexican \u00a0Seasoning:<\/u>\n<ul>\n <li>1 Tsp Seasoning Salt<\/li>\n <li>1 Tsp Mrs. Dash<\/li>\n <li>1 Tsp Cilantro Leaves<\/li>\n <li>2 Tsp Paprika<\/li>\n <li>1\/4 Tsp Cayenne<\/li>\n <li>1 Tsp Adobo<\/li>\n <li>1 Tsp Lemon Pepper<\/li>\n <li>1 Tsp Chili Powder<\/li>\n <li>1 1\/2 Tsp Cumin<\/li>\n <li>1 Tsp Onion Powder<\/li>\n <li>1 1\/2 Tsp Garlic Powder<\/li>\n <li>1 Tsp Black Pepper<\/li>\n<\/ul>\n\n\n<u>Salsa: <\/u>\n<ul>\n <li>8 Roma Tomatoes<\/li>\n <li>1 Jalapeno<\/li>\n <li>1 tbsp Minced Garlic<\/li>\n <li>1 Small Yellow Onion<\/li>\n <li>1 cup Pickled Nopales (catus) , rinsed<\/li>\n <li>30 Sprigs of Cilantro leaves and stems, about 1 cup<\/li>\n <li>1\/2 tsp Salt<\/li>\n <li>1\/2 tsp Pepper<\/li>\n <li>1 tbsp Mexican Seasoning<\/li>\n<\/ul>\nhttps:\/\/www.chefstemp.com\/wp-content\/uploads\/2021\/08\/Michelada-Chicken-Fajitas-5chefstemp.jpg\n\nFor seasoning recipe, mix well in large bowl and put into shaker container.\nFor Salsa , combine all ingredients in a food processor, pulse to desired consistency.
